Stir-fried babylon shells

Ingredients

  • 640g frozen babylon shells
  • 5 Tbsp. XO sauce
  • 1 pepper
  • 2 Tbsp. minced garlic
  • 2 Tbsp. chopped shallot
  • 1 Tbsp. hot bean sauce
  • 1 Tbsp. wine
  • Diced spring onion to taste

Seasonings

  • 1/2 Tbsp. dark soy sauce
  • 1/2 tsp. salt
  • 2 tsp. sugar
  • 2 tsp. tapioca starch
  • 1 tsp. sesame oil
  • 1/2 cup water (about 60g)
     

Method

1    Wash babylon shells, dip in boiling water for a while and then dip in cold water to cool down and drain. Wash and chop pepper.

2   Heat wok and add oil. Stir fry pepper, minced garlic and chopped shallot. Sprinkle wine and add babylon shells, fry for a while.

3   Add XO sauce, hot bean sauce and seasonings, cook for 5-10 minutes or until soup dry. Stir on diced spring onion and serve.
