Stewed chiken-wings in oyster sauce

Ingredients:

  • 1 1/3 lb mid-joint chicken wings
  • 3 ginger slices
  • 2 sprigs spring onion (sectioned)
  • 2 garlic (sliced)
  • 5 oz broccoli
  • 2 tsp wine

Marinade Ingredients:

  • 1 tbsp wine
  • 1 tbsp light soy sauce
  • a pinch of pepper

Seasoning:

  • 2 tbsp oyster sauce
  • 2 tsp light soy sauce
  • 1/2 tsp dark soy sauce
  • 1 1/4 tsp sugar
  • A pinch of sesame oil
  • 3/4 cup water


Recipe instructions:

1. Wash chicken wings. Wipe dry. Add marinade ingredients. Marinate for 20 minutes. Scald in boiling oil. Dish up and drain well
2. Heat 2 tbsp oil. Saute ginger slices and spring onion sections until fragrant. Return chicken wings. Sizzle wine. Add seasoning. Boil again. Stew for about 5 minutes until cooked. Put in sesame oil. Stir well. Dish up.
3. Cut broccoli into flowerets. Blanch with oil and salt water. Arrange on dish.
