Very much like the diverse Asian society, Asian noodles consist of strands that vary in appearance, taste, color, and character. Rightfully symbolizing longevity, Asian noodles have been around for an extremely long time- -China gave birth to the noodle more than 4000 years ago! Considered to be of great importance to the Asian diet, Asian noodles actually supersede rice as the main staple in some regions. With strands that can be straight, flat, round, or wavy and made from a myriad of flours giving off a wide spectrum of colors, each type of noodle lends a unique taste that will be sure to satisfy any craving. Here are the basic noodles defined:
Cellophane Noodles
Cellophane noodles (also called glass noodles, cellophane vermicelli or bean threads) are transparent and made from mung bean flour (also known as peastarch). Noodles made from seaweed are also called cellophane noodles; this variation is very thin and hair-like.
