  • 4 slices ginger
  • 1 stalk spring onion (cut into sections)
  • 2 stalk coriander (stem removed, leaves chopped finely)
  • 3 cloves shallot (sliced)
  • 5 tbsp Shaoxing wine

Marinade

  • 1 tbsp dark soy sauce
  • 1/2 tsp salt
  • 1 tbsp corn flour
  • pinch of pepper

Seasoning

  • 1/3 piece rock sugar (crushed)
  • 2 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp Zhen Jiang black vinegar

Swiss Chicken Wings is not a swiss recipe. The name is derived from “sweet”, which is how this easy to make poultry dish taste like, spicy yet sweet.

Ingredients

  • 4 chicken wings (whole)
  • 1 stalk spring onion (cut into sections)
  • 2 slices ginger
  • 1 star anise
  • pinch of Chinese red pepper
  • a little sesame oil

Marinade

  • 1 tbsp Shaoxing wine pinch of pepper

Seasoning

  • 1/2 cup water
  • 1 tbsp dark soy sauce
  • 5 tbsp light soy sauce
  • 1/2 brown slab sugar
